Ten Little Celebrations – September 2021

Celebrating the waning of summer…the beginning of fall –

Brookside Gardens field trip. Spending a few hours at Brookside always results in at least one mini-celebrations. This month there were three: hummingbirds – bees – and roses.

New low weight for the year. With a whole month at home, I managed to control my diet….and achieved a low weight for the year --- 3 times (lower each time). I’m celebrating the achievement and working to continue the trend!

Easy flu shot. I celebrated how easy getting the flu shot was…no waiting, the pharmacy already having all my information.  And now I’m as protected as I can be for my next road trip.

Macro photography. Celebrating images capture with my phone, a clip on lens and a clicker!

Melons. The season for melons was winding down but we celebrated 2 tasty cantaloupes from the Farmers Market in September.

Early morning in the grocery store. I enjoy grocery shopping….and celebrate that I have the store almost to myself…a low risk return to ‘normal.’

Volunteering. Returning to volunteer gigs – doing outdoor programs with students.. it’s another celebration of going back to a pre-pandemic ‘normal’ that isn’t quite the same but just as satisfying.

Beautiful weather. Sunny days…cooler…a little breeze – this is the time of year that it gets easier to celebrate a day outdoors.

Ferns under the deck. I celebrated that there were more of them than I expected this year!

French fries. I have been dieting so carefully….it was a celebration to have French fries (and cut back enough on other foods that day to not make it a “weight gain” day)!

Aztec Pictograms Are the First Written Records of Earthquakes in the Americas – One of the pictograms matched to a 1507 earthquake that coincided with a solar eclipse!

Food systems: seven priorities to end hunger and protect the planet – A thoughtful commentary re ending hunger and improving diets; de-risking food systems; protecting equality and rights; boosting bioscience; protecting resources; sustaining aquatic foods; and harnessing digital technology.

Eating walnuts daily lowered 'bad' cholesterol and may reduce cardiovascular disease risk – There was a similar article about pecans a few days ago. I’m glad I like both walnuts and pecans! However – ½ cup is a lot to eat in one day. Usually ¼ cup is considered a serving.

Top 25 birds of the week: Woodpeckers! – I always enjoy hearing a woodpecker in the forest…and its a special tree to see them in our yard. The piliated, downy, and red-bellied woodpeckers are native to our area.

How to fight microplastic pollution with magnets – Many people filter their drinking water…but the conversation about filtering microplastics is newer. Hopefully filters that are effective and affordable will become the norm. It will take a long time to reduce the microplastic load already in the Earth’s water. We are just not recognizing the damage they are causing.

Americans Moving to Disaster-Prone Areas, Despite Climate Change – I’ve started to think about this more recently so appreciated seeing this post. Taking climate change into account – why would anyone buy property in areas that will be increasingly flood prone or incredibly hot/dry? A house nestled in a forest may look appealing but there are an increasing number of people that have already experienced the hazards of that beauty.

1,800-Year-Old Flower Bouquets Found in Tunnel Beneath Teotihuacán Pyramid – I visited Teotihuacan in the spring of 1966 when my parents took me to Mexico City. It was one of the highlights of the trip. The new discoveries are interesting….and I am thinking about whether I would like to see it again. Maybe in spring of 2026? The article references a site with some great pictures of Teotihuacan – worth a look.

Changing Food Habits

It’s hard to change the foods we eat. Recently several articles about ultraprocessed food and the impact of our food choices on the environment have prompted me to evaluate what it eat…and decide on some changes I want to make. It’s going to be hard…many of the foods I am focused on are well-entrenched habits. This is only the beginning.

Diet Pepsi (and other soft drinks). They are not food – just liquid that has 0 nutritional value and may have negative impacts on health (jitters and hydration skew caused by caffeine, increasing craving for sugar). But I’ve been buying and drinking them for a very long time; they are a habit that is hard to change. Earlier this year, I changed from plastic bottles to aluminum cans when it became obvious that plastic bottles were not being recycled properly (whereas aluminum cans were)…but that is not enough. When scrutinized objectively – they are not worth anything positive…so why buy them at all.

Peppermint candy. Aargh! These come in big bins…I buy them when I travel then continue eating them after I get home. The lure of sugar and peppermint. I will stop buying them to avoid the temptation. Maybe I should start chewing fresh mint leaves from the garden to get the flavor but not the refined sugar!

Soy or Almond Milk. I’ve been drinking the non-dairy milk – to get calcium via my diet without the challenge of lactose intolerance. The change I am contemplating now is to transition to lactose free milk as a less processed alternative and get more protein too (9 grams vs 6 grams for soy milk).  Also - all the non-dairy milks have supplemental calcium so they are almost like taking the supplement which is an ultimate in ultraprocessed ‘nutrition’!

Turkey sausage. Highly processed but a better choice than pork sausage in terms of calories from fat and also less environmental impact (poultry vs swine). It does have a lot of sodium. I won’t eat it more than once a week or so…but is a quick way to add protein to a meal.

Dark chocolate. Ultraprocessed…but I am choosing to still have it for my 1st breakfast (two squares of the Lindt 70% is my favorite). I like the kickstart it gives my day…enough calories to keep me going before I am ready to prepare my 2nd breakfast at mid-morning. But I am not going to eat more than that small amount very often.

Overall – I am pleased that I have so many fresh vegetables (and some fruits) in my diet. I enjoy the farmers market and the produce section….and finding new ways to prepare salads, smoothies, soups, stir fries – skewing toward raw and whole!  I haven’t become a vegetarian – yet – but I am eating less meat that I was 5 years ago (almost no pork and less beef)…ramping up nuts.

Great to be Home Again

I’m about over the flurry of activity that follows a road trip – emptying the car, replenishing groceries, and doing laundry. Shedding the few pounds of weight and heighted anxiety accumulated while traveling is still a work in progress.

Going to our local farmers market was something I missed while I was away; it felt good to go to the market and come back with fresh produce to fill my refrigerator crispers: onions, collard greens, spaghetti squash and tomatoes.

I’m also thinking about the trip in retrospect at this point.

  • What do I remember most about each state?

    • Texas – I spent the most time away in the state – enjoying seeing family in person. It was hot and very sunny. The speed limits are high and the drivers are usually going at least 10 miles above – sometimes a bit scary. The employees at the Walmart closest to my parents started wearing masks on the last few days (a new mandate from corporate) and a lot of the customers were wearing masks as well. Lots of mosquito bites. Hazy skies (maybe from the fires or maybe just the way Dallas is in summer). Josey Ranch Lake and the Pocket Prairie nearby were pleasant in the early morning…always some plants or wildlife to see there.

    • Missouri – No one was wearing masks even though the state was in the national news for their Delta variant outbreak. People seemed friendly but I got the impression that they didn’t like that I was wearing a mask when I went indoors at rest stops. The rest stops along I44 are not as frequent as in other states and traffic is heavy with lots of trucks (and they sometimes seemed to be playing games passing each other and slowing down car traffic). I had a near accident on I44 when a pickup with a camper on the back must have forgotten how long the combination was - pulling over too soon after he passed me (almost forcing me off the road to avoid being swiped by the camper). A few mosquito bites from sitting out on my daughter’s patio at dusk. I enjoyed the Springfield Botanical Garden.

    • Kentucky – The one overnight in a hotel on my road trips to Texas/Missouri. The highway is scenic, and the rest stops well placed. I recalled the road trip I did with my daughter in 2005 when she was learning to drive; there was a segment in Kentucky that I remembered being scenic; when I got home I looked back in my notes and it was the interstate between Louisville and Cincinnati rather than the route I take now. Signs that feature horses and bourbon seem to be everywhere.

    • Oklahoma – Just passing through. It’s a little harder drive since most is not interstate – no formal rest stops. The toll roads are a hassle. It’s not as pretty as I remember growing up – not as many big trees. Maybe it’s the way the highways have been developed; in the 1960s we were driving a lot of the way on two lane roads.

    • Illinois and Indiana – Just passing through. Rural. There are rest stops frequently enough and they are well tended. The traffic is a lot less than in Texas and Missouri. Plants along the roads are not mowed --- lots of blooms and seeds. I wondered if they are intended to provide food for migrating birds and butterflies.

    • West Virginia – My favorite segment of the trip. Even though I’m seeing it at highways speeds – the forests and mountains are gorgeous. The state does a good job with rest stops along the highway as well. I want to find out more about new national park in the state – New River Gorge National Park and Preserve.

  • I also noticed plants along the way as I drove and at the rest stops. Many of rest stop areas are transitioning to native plants; some even have pollinator gardens. The plantings are something to savor for the few minutes at the place…as the traffic on the interstate continues to roar past.

Better Homes and Gardens Browsed in June 2021

Internet Archive has quite a collection of Better Homes and Gardens magazines that I started browsing through in June…37 volumes in all during the month. It will take at least another month to finish the rest that the archive has available. I selected a sample image from each volume (links at the bottom of this post) and grouped them by decade. Click to see an enlarged version of any image below.

The 1940s were before I was born so purely historical from my perspective. Some of the pictures look almost modern – the child in the snow suit with the shovel, for example. Gardens can look the same from just about any time period, however the people in them don’t; I was surprised at how dressed up women are depicted sometimes even ‘working’ in the garden. The little girl helping with the dishes looks dressed up too.  Technology often dates pictures although the camera shown on the August 1940 cover was about the size of a point and shoot today. The food almost always looks way more complex (more time consuming to prepare) that what we typically prepare today.

The 1950s were too early in my life to remember clearly. The flowers could be modern pictures. The eat-in kitchen is dated but functional (no dishwasher or microwave though); the green glasses look like the ruby red glasses I have today. A story about Cape Hatteras was in a 1957 issue.

I remember the 1960s since I started school in 1960. The flowers and gardens relatively timeless…and garden sheds were catching on. The office could function today….with the addition of a laptop; I liked the location of the window. Kitchens were changing and some designs did not ‘stick’ (like the kitchen in the round). Dishwashers were appearing. Double sinks with counters were becoming common in bathrooms…but ruffles over the mirror must have been a passing fad. Shag carpeting! Picnic baskets were more common than ice chests/coolers for meals away from home – very different than our picnics today.

In the 1970s I finished high school and college. The page describing salad greens from 1970 does not include kale, arugula, or cilantro! It was a decade of more house plants, cheesecake, vegetable gardening, and decorating with crafts as many people were challenged to live well with less spending power because of inflation.

The 1980 volume included a page describing different kinds of pasta. I didn’t notice at the time how many more kinds they were…we usually just bought thin spaghetti and elbow macaroni during the 80s.

Tooth loss associated with increased cognitive impairment – Another reason to not neglect going to the dentist! It’s not just about preserving cognitive impairment either….quality of life is a big motivation as well.

Top 25 birds of the week: Seabirds – From around the world…a few I’ve seen in North America.

Mucus and mucins may become the medicine of the future – There is still a lot to learn about how this might work….but it appears that this is an opportunity to treat disease by enhancing the mechanisms already used by the body. Maybe one of the first uses will be for eye drops to treat eye infections rather than the antibiotics used today.

Protect Pollinators – reform pesticide regulations – Hopefully the action requested by these scientist from around the world will happen…our ecosystems are having enough challenge dealing with climate change. Many pollinator species won’t survive the continued threat of status quo pesticide use.

Keeping your composure: Creative Ways to Compose Your Photographs (part 1, part 2, part 3) – Always good to browse through these kinds of tutorials…pick up some new ideas, celebrate the things you are already doing.

What to do with food waste? – It doesn’t appear than there is any one strategy that will work broadly. I’m glad I have already dramatically reduced food waste and then have a large enough yard to have a compost bin.

Waterfalls of North Carolina – A few years ago, my husband and I made a waterfall themed trip to New York. It seems that North Carolina would be another state that has a lot of opportunities for waterfall photography. Maybe next spring?

Creativity Myths – A recent ‘letter’ on The Painter’s Keys website.  I enjoy the twice-weekly blurbs that appear in my inbox (free subscription) and often follow the ‘click here to read more’ link.

Exposure to light with less blue before sleep is better for energy metabolism – I already change the color balance on my PC screens to ‘nightlight’ between sundown and sunrise. Maybe we will do more eventually based on this and subsequent research. It is probably true that no one should be watching a television screen just before going to bed!

Which processed foods are better than natural? - BBC Future – Processed foods are not all unhealthy. Some are better than fresh (for example, canned tomatoes, pasteurized milk). But watch out for ultra-processed foods – ones derived from foods and additives; they can alter gut bacteria, cause inflammation….and many people have a tendence to overeat ultra-processed food.

Top 25 birds of the week: endemic birds – Birds found only in a small area of the world…and no where else. My favorite is the Bee Hummingbird – smallest hummingbird in the world and only found in the Cuban archipelago.

Dietary cocoa improves health of obese mice; likely has implications for humans -- ScienceDaily – Hmmm…maybe my 2 squares of dark chocolate for 1st breakfast is not a bad thing at all…even though I am not obese.

Chipmunk Quest – We have had chipmunks around our house periodically. They are fun to watch. They seem to taunt our cat through the window!

Europe’s Drive to Slash Plastic Waste Moves into High Gear – Hope similar efforts are made in the US. As an individual, it is hard to avoid single-use plastic although I have made an effort to avoid plastic shopping bags and buy products in paper/metal rather than plastic when that is an alternative.

Move Over, Cicadas: 5 Other Great North American Wildlife Hatchings (and Emergences) – The Brood X cicada emergence is beginning to wane in our area….it was interesting to think about other emergence type events. Maybe one of the events mentioned in this article will motivate a road trip in the next year or so.

Tropical species are moving northward in U.S. as winters warm: Insects, reptiles, fish and plants migrating north as winter freezes in South become less frequent -- ScienceDaily – Shifts already observable…others projected.

Home Again – Day 2

The second day I was back – I was still exhausted but forged ahead. I started the day with a 6:30 AM trek to the grocery store to restock the refrigerator with fresh veggies and almond milk and eggs which my husband doesn’t eat on his own (he claims he gets his fresh veggies in his takeout orders!).

In a intentional move toward pre-pandemic ‘normal’ – I put on earrings after I got back from buying groceries (I had stopped wearing them during the pandemic; afraid of the mask dislodging them or getting tangled)…wearing ones my daughter had gotten me for Mother’s Day.

My husband had made our taco filling recipe a few days before I returned home and we both enjoyed leftovers for lunch. I picked up some blue corn chips with my groceries and ate my serving as a dip. I extended my serving with some sauteed mushrooms and tomatoes…put some chess on top.

I ordered a summer dress for an upcoming wedding and a smaller docking station for my laptop (responding to the bulk and clumsy configuration of the larger docking station I already have). I also ordered some wool dryer balls since my daughter has found them to be effective. It felt good to follow up on lessons learned from my road trip…start preparing for the next one.

In the early afternoon, I walked around the yard to photograph the periodic cicadas that have emerged this year. This is the third time we have experienced it…the second time in this house. I had seen their bumbling flight in the trees from my office window. At ground level, I zoomed in on the insects in the grass or crawling up tree trunks. There seemed to be a lot of sheds in our cherry tree. Enjoy the slide show of the best cicada pictures from around the yard!

Ice Cream Cake

My sister is making ice cream cakes for the warmer weather celebrations this year. She starts with ice cream sandwiches. I was around for the Mother’s Day Cake and took pictures. Yummy!

There are lots of recipes/videos for ice cream sandwich cakes (here’s one) and the general technique is versatile enough to make large and small versions….different toppings and fillings between layers can provide endless variety.

Ancient pottery reveals the first evidence of honey hunting in prehistoric West Africa – Analysis of potsherds from Central Nigeria revealed that around 1/3 of the pots they came from were used for processing or storing beeswax! The pieces of pottery are from the 1st millennium BC.

Big Spring Lodge, Cabins Rehabilitation Lags at Ozark National Scenic Riverways – I hope the project now planned to start in the fall gets completed on time. The place would be a good vacation destination for us since my daughter lives in Missouri.

You are how you cook – Research on the cooking methods in different parts of China and the relationship to the type of grains utilized over time. The areas that boiled/steamed food tended to use millet over wheat or barley since the later two grains take longer to cook by that method.

Fighting dementia with play – A pilot study with a game consisting of a screen and floor panel with four fields that measure steps, weight displacement and balance….users attempt a sequence of movements with their feet requiring physical and mental skills. The pilot was promising. Perhaps these types of games will become one of the strategies to enable people to handle daily life longer.

Meet Benjamin Banneker, the black scientist who document brood x cicadas in the late 1700s – Benjamin Banneker Historical Park and Museum are close to where I live in Maryland. I’ve been there several times (posted about it in March 2015 and December 2018, but hadn’t realized that noting the periodic cicadas was one of his numerous observations.

Ten Little Celebrations – February 2021

The biggest celebrations of February 2021 were about my family surviving very cold weather in Missouri and Texas relatively unscathed…..and everyone staying well for another month. Of course – there were a myriad of little celebrations. I easily list one every day – and sometimes choosing what to record is a challenge!

There were more notations than usual about food in February. Some were experiments that were yummy…others were opportunistic:

Snow ice cream. We had enough snow this month to make snow ice cream. I always wait for the snow to get at least 3-4 inches deep…then collect the top inch for the snow ice cream. I collect a bowl full then add half and half, chipped peppermint candy/sugar, and vanilla. It’s one of the few times I use my old electric mixer! The challenge is to make only as much as my husband and I can consume right away…we usually each manage a large bowl full. …celebrating a snow day favorite

Broccoli  with orange marmalade glaze. When it’s cold outside, I rarely want salad….this experiment was an easy way to have a ‘hot’ equivalent. I cut up broccoli just as I would for salad, tossed it over a spoonful of orange marmalade in a bowl and microwaved it for a minute or so. A quick stir to coat the broccoli with the melted marmalade, and it was ready to eat! …celebrating ‘hot’ versions of salads

Microwave apple with oatmeal and pecans. I bought a large bag of apples that my husband did not like as well as I thought he would, so I was looking for ways to use them. Breakfast in a bowl seemed to be a good option. I put about ½ cup almond milk in a microwavable bowl then 1/3 cup oatmeal, some brown sugar and cinnamon, a cut up apple, some chopped pecans. Microwave for a minute….stir…microwave for another 30 seconds to a minute…and enjoy. I’ve had it for breakfast several times but realize it would taste good to me any time of day! ….celebrating a new ‘comfort food’

Hot chocolate smoothie. I like smoothies and started experimenting with heating them up. My favorite is made with almond milk, chocolate protein powder, cocoa, banana, and kale. I make it the usual way in the Ninja then put it in a Pyrex measuring cup to heat in the microwave. I stir is several times while I heat…it thickens a bit. ….celebrating a decadent (healthy) treat

There were photography entries on my list too….some attempts that produced images to celebrate.

Snowflakes. There were several snow day during the month so I got several opportunities. I learned to pay attention to the temperature; in general – lower is better! …celebrating the challenge of macro photography outdoors in the snow

High key. This is an example of learning something new….being inspired…and lucky enough to create some interesting images almost immediately! …celebrating learning something new – well enough to be ‘dangerous’

And then there was the variety in the rest of the list:

Multiple virtual birding festivals in one day: Niagara, Laredo, and Bosque del Apache. It was almost overwhelming. We ended up saving some of the webinars until the next day. I was not ‘in the field’ but something that would have been physically impossible: New York/Canada – Texas – New Mexico all in one day! …celebrating the wonders of virtual travel

Quiet snowy Sunday. Sometimes it’s good to have a day to just enjoy the scenery from our windows! …celebrating home

A warmer day in Maryland that Texas or Missouri. Texts were flying across states…the family checking in…worried about water pipes breaking or loosing electricity. My family was lucky enough to come through with relatively few problems! …celebrating family sharing during times of near/potential crisis.

Curbside groceries. I have noticed how different it is from last spring. The shoppers are faster (probably more experienced) and the supply in the store is better. It will be wonderful to shop for my own groceries again but for now I am….celebrating the curbside pickup grocery service.

Ten Little Celebrations – January 2021

And 2021 is off to a roaring start. Even with the jarring events of Jan. 6 and the pandemic still raging, there were plenty of reasons to celebrate in January 2021.

Bluebirds at our bird feeder –I celebrate when a bluebird group comes to our deck since it doesn’t happen very often. They seem to show up most frequently when there is snow and ice!

Piliated woodpecker in our forest – They don’t come to our deck…but are in our forest. I see them a few times each the winter when the leaves aren’t in the way. Their red heads are like flames. I think I saw a bald eagle a few times too this January. Even the fleeting sight of these birds is a celebration.

Amanda Gordan and the transition to a new President – A young poet and a shift toward hope for our troubled country toward a ‘forming a more perfect union’

Tennessee Crane Festival (virtual) – Lots of good webinars….dreaming about going to the place in January 2022. Celebrating learning about the place this year…and anticipating a visit.

Space Coast Birding and Wildlife Festival (virtual) – We went in 2019…hope to go to Florida again in January 2022. Celebrating the virtual version this year.

Success making a cheese omelet – I tend to make scrambled eggs but have omelet pans to cook them.  This month I opted to try making an omelet – perfect on the first try…celebrated the accomplishment (and the meal)!

Steak lunch – Our January days have been pretty cold, but my husband grilled on one of the warmer sunny days. A special lunch.

Carrot – coconut – chicken salad – I’ve discovered that if I layer a spoonful of orange marmalade, carrots, canned chicken, and coconut in a bowl….microwave it for a minute…stir…it makes a warm version of a favorite salad to enjoy in winter. Celebrating warm salads!

Howard County Sustainability Legislative Breakfast – Getting an update of what is happening locally re sustainability. I celebrated that good things are being worked at both the county and state level!

Tree trunk macros – It was a short project that I enjoyed a lot. The color and texture of winter tree trunks in our yard were celebration worthy!

Lots of Groceries

It was 3 weeks and a day since I had shopped last and the list was long…my first adventure with that 3 weeks between shopping trips. We could have gotten by for a few more days but I was out of Almond Milk (the backup plan is to take a calcium supplement and use protein powder to make my smoothies) and green veggies (I still had beets and yellow squash puree…just nothing green). We’ve developed some resilience from earlier in the pandemic when it comes to food in the house.

I left the house at 6:15 AM as the recycle truck was chugging through the neighborhood. Traffic was light and it was dark…no sunrise glow on the horizon.

I found almost everything on my list; there were 3 items that I couldn’t find but they can be ordered for curbside pickup from Target. Two desserts were on the list from the bakery (a slice of red velvet cake and 2 servings of pumpkin roll) but they didn’t have either one; maybe that is not such a bad thing for our January diet.

When I walked out of the grocery story, I had 8 reusable bags (some overflowing) plus three boxes of Atkins shakes. It was a very full cart with 2 of the bags hung off to the sides and the boxes underneath.

The back of the car held it all except for the bag with the cut flowers which I always put on the front floorboard.  

I was back home with everything put away by shortly after 8.

One of the downsides for the 3-week interval is that the cut flowers don’t quite last long. Even so the falling alstroemeria petals on the table have an appeal.

In the last bouquet I bought there was one rose included with the other flowers. It only lasted for 2 weeks…and it had glitter on it which makes it non-compostable (those little pieces of plastic become microplastics in the environment almost immediately)! I checked the bouquet I bought during this round at the grocery store – no glitter or paint. I’ll be able to put the spent flowers in the compost bin rather than the trash before I shop again 3 weeks from now.

Ten Little Celebrations – December 2020

A month with lots of celebrations…with some old and new ways of celebrating.

Snow. My husband and I celebrated the first snow of the year by making snow ice cream, attempting snowflake photography, and having a fire in the fireplace. The way we celebrate snow is something that hasn’t been changed by the COVID-19 pandemic; maybe it was better because we didn’t bother to shovel the driveway since we knew we weren’t going to be going out!

Maryland Water Monitoring Council Conference. I enjoyed two mornings of Zoom presentation that were this year’s version of the one-day conference held in December. This was another instance of something better in some respects than the pre-pandemic….no crowded conference rooms or not being able to see the bottom of the slides! I am still celebrating by reading Rita Colwell’s book (she was the plenary speaker) – one chapter per day!

CSA stevia. I thoroughly enjoyed putting a few stevia leaves dried from my collection of it at the CSA into pots of hot tea….a little sweetness to celebrate in something hot to drink on a winter’s day.

Getting stuff put away…given away. I am celebrating getting our basement a little cleaned out. There is still a lot of stuff we won’t ever use again (i.e. to give away…or somehow get it out of the house) or we won’t need in the next year or so and can be boxed up to better preserve it. Getting it sorted and organized feels good….like we are back in control rather than being overwhelmed by possessions!

Making haystack cookies. This was a first for me. I had eaten them at holiday events previously and remembered how much I liked them. None of those events are happening this year so the only option was to make them myself. What a great treat! They will probably be something I make every year…a new tradition coming out of the COVID-19 pandemic.

Sunny afternoon. The weather has turned colder but there was one sunny afternoon that was warm enough to open the windows a little and get some air exchange with the outdoors. I celebrated the day…so different from the others of the month.

Chipotle take out. I enjoy my own cooking…but also a change of pace. And my husband has something he likes from Chipotle too. We order ahead and he picks it up.

Sunrise moment. The color of sunrise light on our forest….always a few moments to celebrate when it happens at the beginning of the day.

Finale of Mandalorian season. We watched every new episode as it came out then celebrated the finale and the prospect of more Star Wars spin offs…nothing too serious but fun to watch.

Last big leaf falling from the sycamore. That last leaf signaled the end of fall…the beginning of winter. I celebrated the passing of the old season…and the new one too.

Yummy Haystacks

I’ve missed the annual holiday gatherings with holiday cookies…and decided to make one that I always looked forward to eating but had never made myself: chocolate butterscotch haystacks. I did a Google search to find a recipe and bought the ingredients on my last trip to the grocery store. The ingredients are meltable morsels of chocolate and butterscotch (or other kinds of ‘chips’) and crispy chow mein noodles.

I melted a cup of each (dark chocolate morsels and butterscotch morsels) in my largest Pyrex measuring cup in the microwave, stirring to make sure they were thoroughly melted, and then folded in the noodles with a spatula. The coated noodles are dropped in small heaps on parchment paper and put into the refrigerator to harden the coating again. They store well in a tin or cookie jar….if they last long enough to need storage.

They are easy to make and a very satisfying treat.

Next time I make them, I am going to mix peppermint candy chips with the dark chocolate for one batch and then make another group of haystacks with butterscotch coating. They will be different colors. The noodles I got seemed a little too long so I would probably break them up a little before I coated them. I also would round up on the noodles. My first attempt was too heavily coated!

If I were making them to take to an event, I would probably try different kinds of chips to give the platter a variety of colors. I also thought that for a nature related event  – maybe they should be called ‘brush piles’ rather than ‘haystacks’!

CSA Bounty Continues

The Community Supported Agriculture shares ended in mid-October and my freezer and refrigerator were very full. I managed to use up the items in the refrigerator except for one sweet potato that got soft; it was good to have crisper space by mid-November! The freezer was still overloaded then but now is beginning to seem like it is just comfortably full.

I am trying to use a few things from the freezer every day. I thawed garlic scapes, cherry tomatoes and green onions to cook with bulgur wheat (I used scissors to cut them up after they thawed) served under a chicken stir fry).

The frozen greens (mostly kale) I use in smoothies.

I still have beets to give color to soups or smoothies….purreed orange veggies (pumpkin, sweet potato, butternut squash) to make custards.

And then there are the heads of garlic that I have on the counter and a small canister of dried stevia leaves I’ve been adding to tea as it steeps. Everything will be used up by the end of January --- with the garlic probably being the last of the 2020 CSA bounty.

I probably did the best job I’ve ever done of getting maximum value of the CSA’s produce because I was at home the entire season and had time to prep/preserve everything.

9 Months in COVID-19 Pandemic

The first vaccine for COVID-19 was approved in the US by the FDA on the 9-month anniversary of the WHO declaring the world wide pandemic. The rollout will take months but there is more hope now….if we can just get through the months until enough people get vaccinated to provide herd immunity. The US is not in a good situation right now with hospitals filling up, larger than ever numbers of people testing positive, and deaths per day about the same as 9/11/2001 – the trauma of that death rate repeated again and again instead of one day. Even a month ago, I thought there were more effective treatments that had been developed since last spring, but it now seems that either they don’t exist or they are in such short supply that they don’t make a difference. Even worse – the best treatments only seem to be available to favorites of the President…implying (or confirming) the corruption of at least part of the medical system in the US.

The psyche of everyone in the country is impacted by the pandemic – made worse by the leadership of the country, particularly at the Federal level and trickling down to some states. There is a lack of caring in American society that still surprises me. I limit the time I spend watching/reading news…stay more with stats and public health recommendations to guide the actions I take relative to the pandemic.

  • I have elongated my time between trips to the grocery store to every 3 weeks (rather than every 2 weeks like I did over the summer and fall or every week I did pre-pandemic). It takes more planning but is preferrable than going back to grocery delivery. I like to choose my purchases directly!

  • My husband and I celebrated Thanksgiving on our own at home and are planning to do the same for all the upcoming holidays. Special foods are still part of the celebration but we cook for 2 (or enjoy a lot of leftovers). I am intentionally trying some new recipes for desserts. We also do telephone calls/Zoom sessions with family on the special days.

  • We are getting take out every week or so. We haven’t eaten in a restaurant since back in February. It’s impossible to know how good the air circulation/filtration is in an enclosed area where 6 feet distance may not be adequate….and one cannot wear a mask while eating. Many municipalities/counties in Maryland are going back to take-out only because of the dramatic rise in cases over the past few weeks (although the rise might be more because of behavior around the Thanksgiving holiday than restaurants); whatever the cause - the likelihood of asymptomatic people in our community has increased and there is a need to respond to that to help avoid hospitals overflowing/starting to ration care.

  • My husband is still planning to do some amateur astronomy sessions with the local club…outdoors and masked and telescopes set up at least 6 feet apart….if the weather cooperates. He did some solar astronomy on his own from our driveway and backyard in November. The club meetings have been via zoom for months.

Over the next month, we might get a better sense of when we will be able to get the vaccine. My plan is to get it as soon as I am eligible. Once I’m protected by it and my parents are in the same state…a road trip to Texas will be my first post-pandemic travel.

At the 9 month mark – I am more hopeful for 2021….but very focused on staying hyper vigilant – doing everything we know to do to avoid getting COVID-19 until we are protected by the vaccine.

Sweet Potato Soup

The forecast for our area this morning was for snow showers. We didn’t see a single flake! But – the cold did get me in the mood to make soup. I had cooked the last haul of sweet potatoes from the CSA a few days ago so I opted to start with the sweet potato puree for the primary ingredient. Things evolved from there.

I put some powered chicken bouillon with water in a pan…added a few cubes of frozen beets (also from the CSA) to increase the potential color of the soup. The beets cooked and softened while I got the other ingredients prepared. The seasonings were garlic (from the CSA too), fresh finger, onion powder, and curry. They were added while the beets were cooking.

I thawed 2 turkey sausage patties and cut them up. I decided a small handful of frozen cranberries would add to the flavor complexity.

After the beets were soft enough, I used the potato masher in the pan…then added the pureed sweet potato, sausage, and cranberries. I cooked everything until the cranberries began to split open.

When I poured it into the bowl, I realized the color had turned out to be similar to cream of tomato soup. The cranberries and sausage cubes floated on top.

Then for the topping of Chinese noodles (I like them better than crackers).

A fabulous winter-time lunch! One of my favorite things about soups is the combination of ingredients…the grand experiment. I just add ingredients that I want to taste together…because that’s what happens in soup. My experiments have become dependable enough that I am confident it will be edible….even tasty! This time it was also a success for the color – a seasonal shade between Thanksgiving and Christmas!
